In 1908, the Russian biologist Eli Metchnikoff credited the long lives of certain Bulgarian and Russian citizens to the consumption of fermented milk products: later the organism was identified as Lactobacillus acidophilus. Humans and animals are healthier when fed these acid producing bacteria because disease-causing bacteria reduce an animal's ability to absorb nutrients by disrupting the lining of the small intestine.
